Cinnamon Swirl Coffee Cake
Ingredients-
(for batter)
1 c. sour cream
3/4 c. butter
1 1/2 c. white sugar
2 1/2 c. flour
1/2 c. chopped walnuts (though I chose to do without!)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
3 eggs
(for the "swirl"!)
1 Tbs. ground cinnamon
1/4 c. white sugar
Directions-
- Preheat oven to 400 degrees, lightly grease your bundt pan
- Cream 1 1/2 c. white sugar with the eggs until well blended.
- Add sour cream and butter, beat well.
- Add flour, baking soda, and baking powder. Mix well.
- Stir in vanilla and chopped nuts (nuts- optional)
- In another bowl, mix the remaining 1/4 c. sugar with the cinnamon.
- Pour half the batter into the pan, then sprinkle the cinnamon mixture over top.
- Then pour the rest of the batter into the pan, covering the cinnamon mixture.
- Bake at 400 degrees for 8 min. Lower heat to 350 degrees and continue to bake for an additional 40 min.
