Finally, Chocolate Torte!

So I before finding this recipe online, I had never even heard of a 'torte' before. Can you tell I'm a newbie? Anyway, the chocolaty goodness called to me and I knew I had to at least give it a shot. Now this was a bit of a harder recipe for me, I haven't separated eggs since I was in middle school! *gulp.* Fortunately, the recipe came with a step-by-step video which I found VERY helpful. Next time I won't need it of course, but it was great to have since I have never attempted a torte before. Here is the original link with the video!  http://www.joyofbaking.com/ChocolateTorte.html


You can check out the ingredients on the original website, (sorry- feeling lazy again. I really need to stop baking so late at night!) but I will go through the directions with some pictures!


Directions

1.) Preheat oven to 350 degrees
2.) Spray or butter a 9'x3' springform pan, and line the bottom with parchment paper

3.) Separate the eggs while still cold, cover each of the bowls with plastic wrap, and bring to room temp.
4.) Meanwhile, melt chocolate with butter in a bowl over a saucepan of simmering water

5.) Beat egg yolks and 1/2 c. sugar together at medium speed until thick and lemon-colored (3-5 min)

6.) Add vanilla and chocolate mixture
7.) In another bowl, beat the egg whites until foamy.

8.) Add the cream of tartar and continue beating until soft peaks form.9
9.) Gradually add the remaining 1/2 c. sugar to the egg whites until stiff peaks begin to form. Using small amounts at a time, fold the egg whites into the chocolate mixture. Do not over mix.

10.) Pour batter into pan, and bake for 50-60 min. or until toothpick comes out with a few moist crumbs
11.) Place on wire rack to cool

My birds!

I have to say if there's one thing I'm currently enjoying in life more than baking and my job, it would have to be my birds. My boyfriend and I always said birds would make lousy pets, they're dirty and they're loud. Boy, were we wrong! My mother's friend's fiance passed away a couple of years ago and could no longer afford to keep their aviary going. So my mom offered to bring home 2 cockatiels- one was just a few weeks old. We fell in love with each other instantly! I named her George and she was my baby. Unfortunately, she came from a bad "clutch" and although she outlived her brothers and sisters by several weeks, she passed after only a short month! I was devastated. So after a few months my boyfriend, Jeremy, and I decided to get back into the bird scene. We got into it alright... we now own four beautiful birdies whom are all completely spoiled rotten. We have 2 cockatiels- Sheldon and Mona, 1 parrotlet- Penny, and 1 conure- Apollo. And a partridge in a pair tree (just kidding!) Anyway, here they are- making their debut!



I never thought in a million years I would be a 'bird person', but these little guys melted our hearts. The one on the bottom right, Sheldon, is definitely very bonded to me, and I to him! He is our only talker and will say, "Whaya doin?", "C'mere!", "Who's a pretty boy?", and "Good boy!" he also 'kisses' and attempts to sing the Imperial March from Star Wars. Very adorable. :)

"Pillsbury The Complete Book of Baking"

So I got this book from my aunt around Thanksgiving and I forgot I had it! SO GLAD I FOUND THIS. This book is awesome. This is not just a recipe book, it has a detailed description of ingredients, emergency substitutions, a list of different kinds of equipment that will be used, tips on measuring, cooking terms and definitions, techniques and tips from everything to how to grease a pan to how to properly mail cookies. How did I forget I had this?!?! Anyways, here's a picture of the book- "Pillsbury's: The Complete Book of Baking"





Have any of you guys read this yet? Recommend any of the recipes? Hopefully I'll be testing out some of these recipes soon. Can't wait to see how they turn out!

New springform cake pan! Yay!

So today I bought a springform cake pan and I'm itching to use it! First thing I'm gonna make is a chocolate torte. I've been wanting to try out the recipe for weeks and I finally have the pan! I'm glad to have it because now I can experiment with cheesecake too! I love my bundt pan but I'm happy to have something new to play with. Do you guys have any good recipes that call for a springform pan? If so, please share! I love to try new things! :)

Cinnamon Swirl Coffee Cake

So again I felt like baking but did not feel like running out to the store for ingredients. So after searching around online for awhile, I stumbled upon yet another yummy recipe. This one, is for a great coffee cake. Here's the link to the original recipe- Cinnamon Swirl Bundt Cake Recipe.

Cinnamon Swirl Coffee Cake

Ingredients- 

(for batter)
1 c. sour cream
3/4 c. butter
1 1/2 c. white sugar
2 1/2 c. flour
1/2 c. chopped walnuts (though I chose to do without!)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
3 eggs


(for the "swirl"!)
1 Tbs. ground cinnamon
1/4 c. white sugar


Directions-
  1. Preheat oven to 400 degrees, lightly grease your bundt pan
  2. Cream 1 1/2 c. white sugar with the eggs until well blended. 
  3. Add sour cream and butter, beat well.
  4. Add flour, baking soda, and baking powder. Mix well.
  5. Stir in vanilla and chopped nuts (nuts- optional)
  6. In another bowl, mix the remaining 1/4 c. sugar with the cinnamon.
  7. Pour half the batter into the pan, then sprinkle the cinnamon mixture over top.
  8. Then pour the rest of the batter into the pan, covering the cinnamon mixture.
  9. Bake at 400 degrees for 8 min. Lower heat to 350 degrees and continue to bake for an additional 40 min.
Now I know a lot of people use different glaze recipes to top off their coffee cakes, but I was just using what I had in my pantry- which ended up being powdered sugar. I just sprinkled a little on top, and voila! A very yummy cake, indeed. Hope you enjoy it!

Devil's Food Cupcakes with Caramel Filling and Chocolate Buttercream Frosting

Today was a chocolate and caramel kind of day. So what better remedy than a good devil's food cupcake with caramel filling and a chocolate buttercream frosting? I pulled from three different recipes on this one, so again, to save your time and mine, I'll just post the links to the recipes and provide some pictures! Booked to make cupcakes for a baby shower!

Ok, so I was asked by my neighbor last night to make cupcakes for her baby shower in April! I'm so pumped! I've never made any baked goods for events other than work parties before, so I'm also pretty nervous. She definitely wants devil's food cake, and the filling and frosting combo is still being decided. So I was wondering if any of you bloggers out there had any cool ideas for decorating for baby showers? I've seen some stuff while browsing online, but nothing I've been thrilled with so far. Also, I'm not exactly sure how to go about "charging" her... should it just cover the costs of the ingredients? And how should I determine the cost if I'm using some of the ingredients I already have in my pantry? Ugh! Please speak up if you have any advice! I'm clueless.. Thanks!! :)

White Chocolate Raspberry Cupcakes

So instead of reposting the whole recipe, this time, I'm just gonna post some pictures! Plus I've been baking all evening and I'm starting to lose energy.. :)

The batter for this recipe is an odd texture, but they end result was great! I worried about nothing :)

Again, pretty uneven and not at all consistent, but I'm working on getting a more precise tool...

I really enjoyed making these cupcakes (almost as much as I enjoyed eating them!) My boyfriend tried them and for the first time in a long time, he was SPEECHLESS!

Devil's Food Cupcakes

What the heck, I feel like posting one more recipe today! This is my devil's food recipe, and I'm completely in love with it. I don't see myself ever using a different recipe. The texture is perfect, and they taste incredible. Plus you can mix it up a little with the frosting. I've used a chocolate ganache frosting as well as a great cream cheese frosting. Yum! Anyway, here's the recipe- hope you love it as much as I do! (This is not my recipe- I found it by doing a random google search!)

Devil's Food Cupcakes

3/4 c. unsweetened cocoa powder
3/4 c. hot water
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 1/4 tsp. coarse salt
1 1/2 c. unsalted butter
2 1/4 c. sugar
4 eggs
1 Tbs. plus 1 tsp. vanilla
1 c. sour cream

1.) Preheat oven to 350 degrees. Whisk together cocoa and hot water until smooth. 
2.)In another bowl, whisk together flour, baking soda, baking powder, and salt. 
3.) Melt butter with sugar in a saucepan over medium-low heat, stirring to combine. Remove from heat and pour into a mixing bowl. With an electric mixer, beat until cooled (about 4-5 min.) 
4.)Add eggs, one at a time, beating until each is incorporated. Add vanilla, then cocoa mixture, and beat until combined. 
5.) Add flour mixture in 2 batches, alternating with the sour cream
6.) Pour batter into cupcake pans, and bake in the oven for 20 min.

There you have it! One of my favorite cupcakes. Again, I'm new at this so my recipes aren't very challenging. But let's face it, some of the best baked goods are easy to make! Hopefully, as you all bear with me, I'll be popping out some new and more interesting recipes soon! Enjoy :)






Sheath Cake- YUM!

So recently I've been trying to move on from just cupcakes and venture more into other delicious baked goods. I got lazy one evening and attempted to find a recipe that called for ingredients I already had laying around because I didn't feel like running out to the store. Success! I found a recipe for Sheath Cake online (which I had never heard of before) and decided to give it a try. For those of you who, like myself, had never heard of this kind of cake, it's kind of a cake meets brownie type deal. Very yummy, and easy to make!
Here's the original recipe!

Sheath Cake

(Prep time- 20 min. Cook time- 20. min.)

Cake

2 c. flour
2 c. sugar
1 c. water
3 1/2 Tbs. cocoa
1/4 tsp. salt
1/2 tsp. baking soda
1 c. butter
1/2 c. buttermilk
1 tsp. vanilla
2 eggs

Icing

1/2 c. butter
3 1/2 Tbs. cocoa
3 Tbs. milk
2 c. powdered sugar
1 tsp. vanilla

Directions:

1.) For cake- mix flour and sugar together in a large mixing bowl
2.) In saucepan, mix water, cocoa, salt, and butter
3.) Bring to a boil
4.) Pour over flour and sugar
5.) Add buttermilk, baking soda, eggs, and vanilla
6.) Mix until blended
7.) Pour into large greased cookie sheet
8.) Bake for 20 min. in oven at 375 degrees
9.) For icing- while cake is baking, bring butter, cocoa, and milk to a boil in a small saucepan
10.) Remove from heat, add sugar and vanilla
11.) Apply the icing to the cake as soon as it's out of the oven


Hope you enjoy! Have you ever heard of/made a sheath cake before? It turned out well for me, except I was using my cheap dollar store cookie sheets. They're incredibly flimsy and warped, so one of my cakes turned out a little funky. The batter had drifted to one corner and the opposite corner ended up being very thin, and thus, burned. *Sigh*. Time for new cookie sheets!!!

Banana Bread Recipe

So I had bought bananas at the grocery store a little while ago, and once they started to bruise, my boyfriend started to beg me to attempt banana bread because his mom and grandma used to make it when their bananas would start too bruise.. *sigh*. Now I had to! So I whipped out my laptop and found what I determined to be a pretty solid recipe. (Thank you, internet!) Not to brag, but it turned out amazing! Everyone at work went crazy for it, as well as my boyfriend and our friends. Definitely recommend this recipe!

Banana Bread


2 c. sugar
1 c. butter
5 eggs
2 c. flour
6 Tbs. buttermilk
2 tsp. baking soda
1 1/2 c. ripe bananas (5 small)
****I actually used 3 regular size bananas that I grabbed at Giant Eagle and the flavor was perfect. Another one might have made the banana flavor a tad overwhelming.

1.) Preheat oven to 300 degrees
2.) Mix all ingredients together in large mixing bowl. Blend well, but do not overmix
3.) Pour into greased and floured Bundt pan
4.) Bake for 60 min. or until bread tests done
5.) Place on wire rack and let cool before removing bread from pan
6.) Dust with powdered sugar before serving

Ta-da! Very simple and very delicious. Enjoy! :)






Finally blogging!

So I've had some friends who have been blogging for awhile, and I have to admit I've found it pretty impressive. I guess my only hesitation has been- "who the hell would want to waste time listening to what I have to say?" Well, I decided that I have some pretty interesting things to share with whoever is willing to listen out there, so I'm taking the leap! I have had some not-so-fun battles with depression, and I just came to the realization recently that I haven't had a real hobby that I truly enjoy in quite some time. So! I thought that baking would be something fun and mostly inexpensive to start with. I fell in love. I'm still pretty new at this, but I have a decent amount of baking equipment, a messy apron, and a can-do attitude! I'm on here to share some of my newly found successful recipes, and to pick up some new ones. I'd love to talk about tips and shared frustrations with all of my fellow bakers out there.
